2 cups grated pumpkin (drained of excess water)

1 egg

1/2 teaspoon cinnamon

1/4 teaspoon salt

Vegetable oil for frying

How to make it:

1. In a large bowl, mix grated pumpkin, egg, whole wheat flour, rolled oats, baking powder, cinnamon, and salt. Mix until the ingredients are well combined. If the batter is too thick, you can add a bit of plant-based milk (e.g., almond milk) or water to thin it out.

2. Heat oil in a pan over medium heat.
